Sheridan Tech School of Culinary Arts on NBC 6

On Monday, September 19, 2011 Sheridan Tech’s School of Culinary Arts had an appearance on Live Miami on NBC 6. Below is the recipe for the dishes we prepared.

 Seared Scallops with Mango puree and Kiwi puree

 Scalloped Potato Napoleon
Ingredients
• 1 1/2 cups heavy cream
• 1 sprig fresh thyme
• 2 garlic cloves, chopped
• 1/2 teaspoon ground nutmeg
• Butter
• 2 pounds russet potatoes, peeled and cut into 1/8-inch thick slices
• Salt and freshly ground black pepper
• 1/2 cup grated Parmesan, plus more for broiling
Directions
Preheat the oven to 375 degrees F.
In a saucepan, heat up the cream with a sprig of thyme, chopped garlic and nutmeg.
While cream is heating up, butter a casserole dish. Place a layer of potato in an overlapping pattern and season with salt and pepper. Remove cream from heat, then pour a little over the potatoes. Top with some grated Parmesan. Make 2 more layers. Bake, uncovered, for 45 minutes. Sprinkle some more Parmesan and broil until cheese browns, about 5 minutes.
For our presentation, after potatoes had cooled slightly, we used a biscuit cutter to form the potato stack. We layered in slices of red bell pepper (using same biscuit cutter) to form the Potato Napoleon. Plate was finished with micro greens and fresh orange slices.
*For Mango puree, simply place a mango in the food processor and puree. For Kiwi puree, simply place 2 kiwi fruit in the food processor and puree
**Scallops were lightly seasoned with salt and pepper and seared in a pan with cooking spray

Red, White and Blue Scholarship Event

On March 10, 2011, the Broward Technical Centers hosted their "Red, White, and Blue Jeans" Scholarship Foundation Event at the Signature Grand in Fort Lauderdale.

The Foundation awards scholarships to future, current, and graduating Broward Tech students to forward their education.  The event featured dishes from 12 local restaurant participants and also the Schools of Culinary Arts at Atlantic, McFatter and Sheridan Tech.

Sheridan Instructor receives Go Getter Award

Sheridan Tech Center is proud to announce that Instructor Olga Alvarez has been awarded the Green Go Getter Award by the Broward County Commission on the Status of Women (CSW).

In Mrs. Alvarez's Green Ready Building Certification Program, students interested in the LEED rating can fulfill one of the necessary criteria to sit for the Green Association Exam offered by the USGBC and the Green Building Certification Institute (GBCI).

Mrs. Alvarez will be recognized at the Women Who Dared Luncheon on November 10, 2010. She will also participate in a panel featuring keynote speaker Congresswoman Debbie Wasserman Schultz to discuss Green Initiatives success.

SHERIDAN TECHNICAL CENTER LAUNCHES GREEN READY CERTIFICATE PROGRAM

The new school year brought about a new program at Sheridan Technical Center - the Green Ready Certificate Program. This program prepares students to sit for the Green Associate exam offered by the USGBC and the Green Building Certification Institute (GBCI). The Green Associate credential denotes basic knowledge in green design, construction and operations for those interested in the LEED rating.

The program is geared toward training as an introduction into LEED and sustainable green building practices for all and will take into account exam preparation for those that want to take the LEED Green Associate and LEED-AP+exams.

Our instructor is Mrs. Olga Alvarez, ASID IIDA, LEED-AP. Mrs. Alvarez has over 30 years of experience in the design industry and has been involved with the green building movement in South Florida for the past 6 years. Mrs. Alvarez is the past president of the US Green Building Council - South Florida Chapter.

Learning Objectives for the class will include describing green building and the role of USGBC and LEED; recognizing the intents of each LEED Credit Category; explaining key sustainability terms and concepts ; identifying green building best practices; and will examine cost considerations of green building.

eLearning Broward in the News!

eLearning Broward at Sheridan Technical Center is proud to announce that the online GED Elluminate workshops that our instructors do has been highlighted as a "promising practice" by the Florida Literacy Coalition (FLC)! What a great honor it is to have our online workshops recognized by FLC.

The workshops are a unique component of eLearning Broward – this series of on-line, subject specific adult education workshops compliment and reinforce the content provided through the district’s adult education on-line courses and traditional classes.

These workshops are real-time stand alone sessions that cover subjects such as the metric system, geometry, reading, essay writing, social studies, GED test review, and time management strategies. The workshops are typically offered several times a week averaging 1 hr per session by teachers from Broward County.

The Elluminate web conferencing system is used to offer the sessions. Perhaps we'll be able to inspire others to start similar events that benefit students!

Anita Ryall ExcellenceAward Winner!

Sheridan Technical Center is proud to announce that Kimberly Gates, a GED instructor with eLearning Broward, has had the distinct honor of receiving the "Anita Ryall Excellence in Adult & Technical Virtual Education Award" at the Adult and Community Education (ACE) of Florida conference this past month.

 

The Anita Ryall Excellence award is given to educators who demonstrate the ability to foster excellence in adult or post-secondary career or technical education and contribute to the continuous improvement of student learning in the virtual school environment.

 

Kim is a superior teacher and is always developing innovative programs for her students that facilitate collaboration between a virtual GED program and Sheridan’s other workforce education programs.  Although not in a traditional face to face classroom, Kim’s online students enjoy a climate of caring and respect conducive to effective teaching and learning to achieve their high school diploma.

Business can now direct sales tax collection allowances to classroom technology just by checking a box on sales tax remittance forms.  These forms will be used to purchase up-to-date classroom technology and provide teacher training in the use of that technology in school systems throughout the state.

School districts will receive the collection allowances from sales tax collected in their county when they adopt a resolution that assures the money will be used for the stated use (classroom technology).  Last year $61 million in collection allowances were retained by Florida sales tax collectors and even more could be made available for classroom this year.
